Merry Christmas Eve!! Can you believe Christmas is tomorrow?? We will be spending both days with Tim’s side of the family. I am excited to see everyone, but I always get a touch overwhelmed because of all of the food. I stick 100% to clean Paleo during the holidays because I can’t handle feeling gross and bloated come the 26th, lol. I really enjoy being stricter with my diet because my body functions so well when I do. So, the fact that there will be 7 different kinds of desserts is slightly intimidating to me. But, I know Tim will help me and that I can do it.
Last night, my housemate and I had a little Christmas movie marathon! We watched Elf, The Holiday and Family Stone. Awesomeness abounds! It was so fun! While we watched, I got my cook on and whipped up some incredible tomato soup!! I have never made tomato soup from scratch before! When I was living at home, we always had the Campbell’s canned tomato soup….gross! This tasted just like it, but fresher and more delicious! The cheddar biscuits went along so well that it felt like eating total comfort food!
Let’s start with the biscuits so you can make the soup while they’re baking!
Pumpkin Cheddar Biscuits
Adapted from Urban Poser
Ingredients:
3/4 teaspoon baking soda
A scant less then 1/2 teaspoon salt
3 large eggs room temp is best
1/2 cup plus 2 tablespoons roasted or canned pumpkin puree or butternut squash at room temperature so the oil doesn’t solidify (you can skip the extra 2 TBLS if your pumpkin is really watery)
Delicious Tomato Soup
Ingredients:
1 28 oz can Organic dices tomatoes
1/2 cup full fat coconut milk
salt and pepper, to taste
Directions:
In a blender or food proc, mix all ingredients until smooth. Pour into a pot and heat on the stove to desired temperature. Pour into cups or bowls and garnish with fresh basil or goat cheese.
