It’s been a busy weekend so far!! Friday, I actually got up early to do a trail run up Angels Rest in the Gorge! It was an amazingly warm and dry morning, even though clouds carpeted the sky. I even did a little video (in all my sweaty glory).To watch, click on the title of this post!

Running (ok, jogging….ok, walking really fast) up Angels Rest in the Gorge
I am also pulling 4 days straight @ Peets Coffee which always leaves me feeling oily like a coffee bean and slightly strung out (on caffiene, of course).
In my spare leisurely time, I have been able to sneak some time in the kitchen. With my return to CrossFit (after my 3 full weeks off!!!) and trail running, my appetite has also made a comeback! Crazy how that happens.
Anyways, so Saturday evening I decided I wanted a little Paleo treat :0) The first place I looked was PaleOMG. Juli Bauer not only cracks me up but she rocks it in the kitchen Paleo Style! I stole her caramel recipe to make deliciously velvety caramel!
I am thinking this plus some apples are in my near future!
PaleOMG Caramel Recipe
Ingredients:
- 12-14 medjool dates, pitted and soaked in water for an hour
- 5-6 tablespoons canned coconut milk
- 3 tablespoons water
- 1 teaspoon vanilla extract
- pinch of salt
- Turn on until dates have broken down (less than a minute) then add your coconut milk tablespoon by tablespoon to the dates while the food processor is still running. Then add your water as well.
- And add your vanilla extract and pinch of salt.
- Process until you get a caramel. BOOM.
I also got to make some coconut butter.
I have made this before and am always craving it! It’s not exactly like Artisanas, but still really good (and cheap!!). What would cost $11 in stores cost me a meager $2!
Love making my own goodies at home! You can make your own coconut butter (which is like coconut oil- firm at room temp but can be eaten like that or heated up to use a drizzle) here!
Next up for this weekend is a bike ride along the Columbia River with my gal Liz and a BBQ with the in-laws! What about you??
