My first experience with kombucha was about 3 years ago at Peet’s in Lake Oswego. I remember it clearly because my co-worker Christina made her own. She gave me some to have for my stomach troubles. It was a mason jar full of cloudy water…very interesting!
My relationship with kombucha has been a strained one. I enjoy the occasional splurge (most are upward of $3) and always feel good drinking it, but I also don’t know if it is legit. Wikipedia says that Kombucha is an effervescent tea-based beverage that is often drunk for its anecdotal health benefits or medicinal purposes. Kombucha is available commercially and can be made at home by fermenting tea using a visible, solid mass of yeast and bacteria which forms the kombucha culture, often referred to as the “mushroom” or the “mother”. Awesome.
Some people claim that kombucha detoxifies the body and energizes the mind’, although there is little published research on the health benefits of kombucha. Proponents of kombucha claim it aids cancer recovery, increases energy, sharpens eyesight, aids joint recovery, improves skin elasticity, aids digestion, and improves experience with foods that ‘stick’ going down such as rice or pasta.
New Seasons (and Whole Foods) have a rather large assortment of this magical elixer. Synergy has some that even have chia seeds in them (which is an odd texture, let me tell you!!). They have Dr. Kombucha which is Townshends Tea go to brew. Today, I decided to give it another try. I picked up a brand that was new to me called KeVita.
KeVita makes probiotic drinks which can help ease digestion, break down gasses and promote healthy bacteria in the gut. I tried their coconut flavor.
