Day 4- Observations

Saturday, I woke up a little early and wandered through our backyard to do some berry picking!

It doesn’t take very long since our backyard is teeny tiny, but I am not complaining. I got a handful of blueberries, raspberries and blackberries. I added these to my Fage Greek yogurt with a handful of chopped walnuts and some Truvia. It was delicious!!

I had some great meetings with clients and got to teach my nutrition class on fats and carbs. I thought it would be fun to include a copy of my handout for you to look at, should you so desire :0) The Truth About Carbs and Fats is in a Word Doc, not a PDF, although I am sure you can open it in either. I would post it on here, but it’s 5 pages long :0)

After work I, the hubs and I got all dressed up and headed to our favorite restaraunt, The Observatory! It’s an awesome little joint in NE Portland that serves amazingly healthy dishes locally grown ingredients.

Tim ordered the fish and chips with yummy squash while I got the chicken salad with some minor modifications. So, the salad comes with chicken, corn, bacon, croutons, tomatoes, snap peas, blue cheese and dressing. That alone would put the salad well into the 800’s for calories!!! So, I asked for the following:

– Walnuts instead of croutons (This way, I would be getting good fats that would help keep me full)

– No cheese (especially blue cheese since it is very caloric)

– No corn (my blood type doesn’t do well with corn)

– A vinagarette on the side

It was soo filling and delicious, I couldn’t even finish it (plus, the corn snuck in, but I ate aorund it). Tim ordered some drinks that I had a few sips of (I had to try a gin and tonic!).

After dinner, we played Rummikub! It’s one of my favorite games!

Tim put up a good fight, but in the end- I dominated.

Afterward we strolled down to Bipartisan which is a little “bipartisan” political coffee shop and also the place where we had our first date on December 11th, 2007!! We got a decaf Americano with steamed soy to share.

Taken before I left to meet Tim for our first date!

Then we wandered around the neighborhood. There were some great flowers blooming!

Then we went home and watched Hitch. I love that movie!! The dance scene cracks me up everytime!
I made a little scrumptious dessert for us to share, so I thought I would share it with you!

Chocolatey Almond Butter Dip w/ Cinnamon Apples
Ingredients:
1 heaping tablespoon of almond butter (peanut butter would work too)
1 tablespoon unsweetened cocoa powder
1 packet of Truvia (or Stevia, agave, maple syrup- whatever tickles your fancy)
1/2 scoop protein powder (totally optional, but it was delish)
3-4 Tablespoons Almond Breeze (or Soy)

1-2 apples, sliced
1 tablespoon cinnamon

Directions:
Mix all top ingredients into a bowl and mix until blended. Chop apples into slices and sprinkle with cinnamon. Heat in microwave for 30 seconds. Dip and enjoy!!

Final report for Day 4, feeling great, although I did “cheat ” a little at dinner by having more than my alloted “bites” of carbs (5-10 per meal) according to the ME Diet. I was close though, so I don’t feel too aweful. Tomorrow, I’m hitting the gym for my 30 minute weight session. I will let you know how it goes!

Day 3

Breakfast was a tough one due to lack of groceries. I decided to go with two slices of turkey bacon and a small apple heated up with cinnamon and almond butter.

I had a fabulous meeting with a HFTY client. I could talk about food and fitness all day long!! Then it was off to Trader Joes for some yummies! Some things I picked up were:

Bagged Kale- sooo convenient!

Bagged Spinach

Avocados

Walnuts

Fage yogurt (apparently pronounced fa-yeh)

And, a KIND bar for the hike ;0) I love me some dark chocolate cherry goodness

Sandy and I hiked Angels Rest at an awesome pace! We made it to the top in 45 minutes and had 8 “roadkills” on the way up. We saw about 15 snakes (eeek!!!!)It was a beautiful day to get out and hike. It was exactly what I needed to release some stress. We munched on almonds and snap peas on the drive home. If you have never driven through the Gorge, it’s absolutely breath taking! I never get tired of the views!

Then I went home and made this delicious sauce from Ohsheglows. I cut up some veggies and added the sauce while Tim put it on some whole wheat noodles. It was delicious!

We finished the evening with a killer game of Scrabble with some popcorn and Cheezits (I had a couple :0)

See you tomorrow!
