Delicious Caramelized Onion Bacon Frittata

So, one of my new favorite bloggers is Juli at PaleOMG! I love her witty, ADD filled writing. She’s a touch on the rough side, but in the kitchen she is sheer genius!! I have made a ton of her recipes. It’s like I read it, then run to the kitchen to make it! It was the same with this. I read her post on frittatas and 45 minutes later mine was done!

I did make a couple of modifications to it. Tim said it was delicious, which is a word he is reluctant to use, so I know this one is a winner!

Delicious Caramelized Onion Bacon Frittata

Serves 2-3

Ingredients:

  • 6 eggs, whisked (Or eggs whites if you want less cholesterol)
  • 4-5 strips of bacon
  • 1 sweet onion
  • 1 shallot
  • 1 cup chopped kale
  • 1 bell pepper, diced
  • salt and pepper, to taste
  • 1-2 tablespoon Gold Label Virgin Coconut Oil (to grease your 8×8 glass baking dish)
Directions:
  1. Preheat oven to 350 degrees.
  2. First cook your bacon in a large skillet over medium heat until cooked through.
  3. Dry bacon between two paper towels and set aside.
  4. While pan is still hot and over medium heat, add your sliced onions to the bacon grease (trust me on this one!!)
  5. Cooking down for about 8-10 minutes, continuously stirring onions to help them from burning.
  6. While the onions are caramelizing, whisk eggs until fluffy. Crumble bacon and add that, eggs, kale and peppers to your pan.
  7. Once your onions are caramelized, place the onions on top throughout the baking dish, covering all the eggs and bacon.
  8. Bake for 20-30 minutes of until your eggs are completely cooked through in the middle.
  9. Enjoy!!


Soooo yummy! I think I could have left my onions in a little bit longer. Next time!

An Egg McMuffin: Every Eggs Dream??

Have you seen some of the ridiculous billboards for fast food lately??

So, this one was tagged with graffiti, but you get the gist. This one makes me want to go into a sugar coma.

This was the most rediculous one! The Drive Thru Diet….we all know what happens when you go on a diet…you gain what you lost and then some!!

The way they treat eggs and chicken? I don’t think so.

I think my eggs would like to be….

Eggstraordinary Muffins

Adapted from Everyday Paleo

Makes 9-10 muffins

Ingredients:

6 eggs (or 3 eggs 3 egg whites, but the fat in the yolk makes these filling)

1 green onion

1 zucchini

1-2 big handfuls of spinach

1/2 a jar of roasted red and yellow peppers

6-8 slices of COOKED bacon or suasage

Thyme, Oregano, Basil, Garlic Powder

sea salt and black pepper to taste

Directions:

Preheat oven to 350 and grease with olive oil two muffin pans (I used heart shaped brownie tins!). Whisk all your eggs in a big bowl. In a food processor throw in the green onion, zucchini, meat, and peppers and process until finely chopped but NOT smooth (yuck…).  Add  this mixture to your eggs.  Throw your spinach into the processor and finely chop and also add to your eggs. Mix the egg mixture well and using a 1/4 measuring cup, fill the muffin pans (you’ll be able to make 9-10 cupcakes).  Bake for 20-25 minutes or until the eggs are set in the middle.

These little guys are amazing with salsa or some feta sprinkeled on top or even in the mix!

Speaking of fast food ads, the Hardees Milkshake makes me laugh every stinkin time! The guys face, rofl!
