I loooove fall!
What I don’t love is EVERYTHING “Pumpkin Spice”. Ugh. Sooo over it!! At first it was just Sbux with their nasty Pumpkin Spice Latte. Then it exploded into a mess of pumpkin spice products. Cookies, crackers, chips, soups- even dog food (no joke, I’ve seen it!)!!
Every endcap at Whole
Paycheck Foods is piled high with all the pumpkin crap you could ever want.
So, you will not be finding any “pumpkin spice” recipes from me this year. If you want to, add literal pumpkin pie spice to whatever you want to flavor. #rantover
Anyways, it’s been a while since I’ve blogged. Of course. LP (short for Little Poop) has been soooo grumpy and fussy #teething, #wonderweeks #transition #napstriking #allthefreakingyellingandscreaming. I feel like the world’s worst mom lately because me fuse is short and so is my sleep. It’s a good thing he’s freaking adorable….or else….jk (sorta)
Ok, back on track. I wanted to share some awesomeness from my kitchen mixed with a little fashion show (what the Paleomg!?). I’ts no secret that I loooooove Lululemon. I don’t care how see thru their pants are or how overly expensive everything is. It is comfortable, cute and totally my style (except for their newer stuff which I hate). I found this amazing cardigan/sweater/jacket at Buffalo Exchange the other day- score!!! I looove it! Now, if the weather would just chill out (literally).
My friend Liz gave me this adorable plaid shirt which I have been practically living in. Really, I should probably change my clothes. Hang on….brb.
Finally, this belt buckle is awesome for two reasons: 1) It has rhinestones! 2) It now easily fits into the last hole which means that being down to one nursing sesh a day has helped me lose weight (never my goal, but always a pleasant surprise).
Now, onto the food! I have been posting pictures of what I have been cooking almost everyday on the Rebooted Body Facebook page. If you haven’t joined the tribe, you’re majorly missing out!! It’s a great place to talk health, wellness, psychology and of course, nutrition! The last pic I posted was of this delicious soup that I made up on the fly. #nosoupforyou (sorry, like I said, sleep is in short supply around here).
It combines wonderful spices with filling lentils and cauliflower cooked in ultra healthy bone broth.
Awesome!!! I stored the extra in mason jars and threw it (not literally) in the freezer to save for a rainy day.
The other awesome things I have been doing are this simple Naked Apple Butter from Ohsheglows (I always type “ohsheflows”- argh!). If you haven’t visited her vegan blog, DO IT NOW! She is uh-mazing!
I bought in on half a cow and got some amazing cuts of meat and some incredible femur bones that were suuuuper dense and fatty. This broth tastes like heaven! I love the minerally goodness on the bottom. I feel healthier just looking at it!
Ok, enough rambling from me. Get in the kitchen and make some soup!!
- 3 cups soaked yellow lentils
- 6 cups bone broth (or 4 if you want more of a stew consistency)
- 1 bag grated carrots (or be cool and grate your own)
- 1 sweet onion
- 1 head cauliflower, chopped
- 5 cloves of garlic, chopped (or use garlic powder like me!)
- 1 tsp cinnamon
- 1 tbs cumin
- 3 tbs curry powder
- 1/2 tsp cayenne
- 2 bay leaves
- 1 tsp salt
- 1 tsp black pepper
- Throw everything into the crockpot and cook on high for 4 hours. Discard bay leaves and serve with a dollop of coconut or sour cream.
- Cool and store in 3/4 full mason jars in the freezer for best results.
- Don't be afraid to play with spices!! These are suggested amounts. I always go by what smells good.
- You can add ham or sausage if you want a "meal soup".
